As a mother of three who works full time and pretty much blogs the same it is hard to find time to cook. Who am I kidding, I’m just not much for cooking! However I love to find short cuts, something to make cooking easy. Easy doesn’t always mean “it taste good” especially with three children as the taste testers. I’ve tried Kraft Fresh Take once before and really enjoyed the Chedder Jack & Bacon Recipe.
Today I was issued a challenge, a challenge that involved a Kraft Fresh Take flavor and a time limit. I was asked to use the Italian Parmesan Kraft Fresh Take and make a meal under 3o minutes, paired with two side dishes, and would be leftover friendly. Definitely sounded like a challenge worth taking on, because leftovers means TWO meals in one. So with that, pictured above is Chicken Nuggets with corn and pasta, and for leftovers Chicken Nugget Pasta Salad!
The best part is with the Kraft Fresh Take it was super easy and quick to make and you can do it with any of the great Kraft Fresh Take flavors.
- Chicken Breast (l lb)
- Choice of Kraft Fresh Take
- 2 Tablespoons Olive Oil
- Choice of Pasta
- Choice of Vegetable
- Boil water for pasta and prepare as instructed
- While pasta is cooking cube chicken
- Open the bread crumb pouch in your Kraft Fresh Takes and cut chicken by putting in a few pieces at a time and shake
- Heat up 2 Tablespoons of Olive Oil in frying pan and cook breaded chicken
- While both pasta and chicken is cooking cook vegetable of your choice how you like it
- Once the pasta is done, strain and mix with the cheese side of the Kraft Fresh Takes
The best part is the leftovers. Instead of packing up three different dishes in the refrigerator simply mix everything together together and you have made a great Chicken Nugget Pasta Salad. You can eat it either cold or warm. Cold would also taste great with a little Italian dressing. What I loved best about this is it took 20 minutes to prepare and cook!
