How to Make

To make pumpkin bread, start by sifting together 3 ½ cups of all-purpose flour, ¼ teaspoon baking powder, 2 teaspoons baking soda, 1 ½ teaspoons salt, and spices (1 teaspoon each of nutmeg, cloves, and cinnamon). In a separate bowl, mix 1 ½ cups granulated sugar and 1 ½ cups packed brown sugar, then combine with 1 cup of unflavored or extra virgin coconut oil and 2 cups of canned pumpkin. Incorporate the dry ingredients into the wet mixture, stirring until well blended, and then add 4 eggs one at a time, mixing thoroughly. Pour the batter into two greased and floured 9 ½ x 5 ¼ inch loaf pans and bake at 350°F for 50 to 60 minutes, or until a toothpick inserted comes out clean. Allow to cool for 5 minutes before serving.
