Pulled Pork Tacos

Taco Tuesdays are a favorite in our household. Traditional tacos are great but it is always fun to try something different like these Sweet & Spicy Pulled Pork Tacos with Grilled Pineapple Salsa. Tacos are such a versatile food you can add as much or as little as you want. Your base can be beans, chicken, steak, or pork. Every night can be taco night and each night is different. For a delightful change, consider using pulled pork for your tacos.

This recipe can be made with your own pulled pork or a pre-made pulled pork, one of our favorites is Jack Daniel’s Honey Pulled Pork. These are very easy to make. Grill the pineapple and peppers for the pineapple salsa. Set aside and make the pulled pork following the package directions. Make the pineapple salsa with the grilled items, jalapenos, cilantro, lime juice, and olive oil. Salt and pepper as desired. Heat up your tortillas, add your meat, pineapple salsa, and top with red onions and cheese. Or any other toppings you like on your tacos. I personally always add sour cream. Enjoy crafting your own delicious pulled pork tacos with unique toppings.

Ingredients
  

  • 1 pkg pulled pork
  • 12 corn tortillas
  • 4 slices pineapple fresh and sliced cut about 1/4 inch thick
  • 1 small poblano pepper halved and seeded
  • ½ red onion cut into thin slices
  • 1 jalapeno pepper seeded and finely chopped
  • 1 ½ cup cheddar cheese shredded
  • 1 tbsp. chopped fresh cilantro
  • 1 lime
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Preheat grill to medium-high, about 400°-450°F, and lightly oil the grate.
  • Grill pineapple and peppers for 4-5 minutes per side until lightly charred and tender.
  • Remove from grill and allow to cool slightly about 5 minutes.
  • Heat pulled pork as per package instructions while waiting to cool.
  • Dice the grilled pineapple and peppers and place in a medium bowl.
  • Add chopped jalapeno and cilantro. Season with a big squeeze of fresh lime juice and olive oil.
  • Season salsa with salt and pepper, to taste. Set aside.
  • Place desired amount of heated meat in each tortilla.
  • Top with grilled pineapple salsa, red onions, and cheese.
