I went to the beach after work last night, I took a walk, looked for shells and went in the water for a quick dip. One of the things I love about South Florida in the summer is you can go for a refreshing walk right after work and still get home before it is dark. I stopped and did a little shopping before arriving home so it was about 8:30 by the time I got home. Much to late to cook a big meal, to late to order something that takes 30 minutes to an hour to deliver so I looked in my freezer and was delighted to see that I had purchased new Lemon Grass Kitchen line from Walmart. This line is one of the first frozen Thai food lines and was created by Chef Mai Pham bringing Asian flair to your freezer without the difficulty of cooking a meal from scratch. And believe me I tried to cook Asian food once, once being the key word here, it took forever and was terrible, my husband and I decided from that moment on we would order delivery or go out to eat Asian,,,lol !!!
I read the instruction for cooking and was happy to see that I could cook a meal in the microwave in 6 minutes or on the stove top in 12 minutes or less. I chose the Shrimp Pad Thai and decided to cook it on the stove. First thing I had to do was to place the packet of sauce in warm bowl of water to thaw, then place the frozen noodles in a skillet with 2-3 tablespoons of water, cover and heat for 2-3 minutes, sounds easy enough to me.
then add the sauce, vegetables and shrimp cook uncovered for another 2-3 minutes
Keeping track of the time it take to make this dish 6 minutes so far to create this fabulous meal.
Well to tell you that I was very much pleased with the texture, and taste of this meal would be an understatement. I happened to be talking to a girlfriend while preparing the meal and when I took the first bite, I said to her this dish is fantastic, you have to try these, it seriously tastes like I am sitting right in the restaurant eating. The noodles are moist, not rubbery at all which is some what common for frozen dinners, the flavor is fresh and sweet yet sour and it has a mild spice. Very refreshing and extremely yummy. Best of all they are free of MSG and no trans fat. I like that you can customize these already delicious meals by simply adding ingredients like peanuts and bean sprouts to the Shrimp & Chicken Pad Tai, add basil and cilantro to the Lemongrass Chicken Stir Fry, or chilies and lime wedges to the Thai-Style Chicken Fried Rice. I will be trying these additions out when I make my next meal for sure.
