I bet you had no idea that October was National Pork Month? Seems like there is a month and day for everything. I love to change things up once in a while and prepare meals with pork. I can often find lean pork chops so my meals are still healthy.
Right now through October 7th Costco is honoring National Pork month with a sale:

Temperature News: The USDA reduced the temperature guideline for pork loins, chops and roasts from 160 to 145 degrees F, with a three minute rest. This will yield a juicy, flavorful product that may be pinker in color than most home cooks are used to. Ground pork, like all ground meat, should be cooked to 160 degrees.
