Glazed Pumpkin Raisin Cookies
Ingredients:
- 2 cups shortening
- 4 cups flour
- 2 cups sugar
- 2 teaspoons baking soda
- 2 cups pumpkin
- 2 teaspoons cinnamon
- 4 large eggs
- 2 cups raisins
For Frosting:
- 1 1/2 teaspoons vanilla
- 1 cup brown sugar
- 3 tablespoons butter
- 2 cups powdered sugar
- 4 teaspoons milk
Directions:
Cream shortening, sugar, and pumpkin. Add eggs and mix well. Add sifted dry ingredients and raisins. Drop onto greased cookie sheets. Bake at 375° for 10-12 minutes
For Frosting:
Heat butter, milk, and brown sugar until dissolved. Cool and add powdered sugar and vanilla. Spread on warm cookies.

This is such a simple recipe, even with all the different ingredients. I love how the pumpkin puree gives the cookies moisture and you might be able to increase the pumpkin and decrease the shortening.
