I love avocados, ok I actually love guacamole. I love it with chips, on tacos, fajitas, burgers, sandwiches and more. However you can have good guacamole and not so good guacamole. I have purchased some that taste like it was manufactured in a plant instead of using real avocados! This is my favorite recipe, Avocado Salsamole it is a recipe I adapted from the book “You on a Diet”. I’m always looking for good recipes so please feel free to point me to a good healthy recipe.
Guacamole Recipe: Avocado Salsamole
- ¼ cup finely chopped red onion
- 1 tsp minced jalapeno, or more to taste
- 1 Tbsp lime juice
- 1 Tbsp cider vinegar
- 1 tsp minced garlic
- ¼ tsp salt
- 1 ripe avocado, peeled, pitted, and coarsely mashed
- Combine onion, jalapeno, lime juice, vinegar, garlic, and salt in bowl. Add avocado stir well. Reserve avocado pit to add to mixture to prevent browning when refrigerated.
East to make this guacamole recipe really does add some sick to a fan favorite. The great thing is you can add it to just about anything burgers, toast, sandwiches and more. Or just grab the chips and start to dip!

WTG on the weight loss!! Maybe if I started posting pictures of my scale on my blog, I'd get off my fat arse and start the weight loss again (down 30 lbs but haven't lost any in about 2 months. Yay motivation!). 🙂

You'll be at that next goal in no time! You're doing great! Don't beat yourself up over the exercise and just fit it in when you can. You're doing enough running around to count as exercise anyway.
That recipe sounds really good! I would probably make it without tomato also. I think it would be good on a turkey sandwich too.
