Halloween is just a few weeks away, the air is beginning to have a chill, and fall is upon us. When I think of fall I think of orange and red falling leaves, pumpkin patches, and scarves. At least that is the image my mind conjures even though I’m currently in flip flops and watching the kids swim in the pool. I love the sunshine and would never leave Florida but I do miss the seasons. This is why in order to trick my senses I like to opt for fall scented candles and yummy fall recipes to remind me that fall is upon us.
My mom made these amazing cookies months ago and we loved them so much we made them again. This time I switched up the frosting a little to give it just a little more pumpkin pie flavor by adding International Delight Pumpkin Pie Spice flavored creamer.
- 2 cups shortening
- 4 cups flour
- 2 cups sugar
- 2 teaspoons baking soda
- 2 cups pumpkin
- 2 teaspoons cinnamon
- 4 large eggs
- 2 cups raisins
- 1½ teaspoons vanilla
- 1 cup brown sugar
- 3 tablespoons butter
- 2 cups powdered sugar
- 2 teaspoons milk
- 2 teaspoons International Delight Pumpkin Pie Spice flavor
- Cream shortening, sugar, and pumpkin. Add eggs and mix well. Add sifted dry ingredients and raisins. Drop onto greased cookie sheets. Bake at 375° for 10-12 minutes
- Heat butter, milk, creamer and brown sugar until dissolved. Cool and add powdered sugar and vanilla. Spread on warm cookies.
The awesome thing about International Delight flavored creamers is a little goes a long way and can change the flavor of a favorite recipe just enough to give it a whole new yummy flavor!
